Our dinners this week reflect the cold weather that we are still having here in the Snow Belt. I’ll be SO happy when things warm up! But, since that hasn’t happened yet, I’ll put our oven to use almost every day for this Gluten-Free Menu Plan.
There’s a slow cooker full of corned beef dinner that simmers all day long to start the week, and we’ll try to save some corned beef for sandwiches a few days later.
After that there are five meals that use the oven at least in part, from baked fish fillets, a chicken casserole, some flatbread to make corned beef sandwiches to go with curry soup, a meatloaf and then a pizza dinner.
The final dinner is a chicken stir-fry, but I will use the oven that day, too, to make some cookies.

Some of these are a complete meal by themselves. Some are only the main dish. For those, when I choose side dishes, I usually try to include some healthier options, like low carb veggies to replace my serving of pasta or starchy dishes.
