Gluten-Free Diet Menu Plan for the Week of October 14, 2012

This week’s gluten-free diet menu plan begins with a hearty Tomato Bean Soup to accompany some Broiled Tilapia Fillets. We had a guest with us for this meal today so I cooked more sides than usual and it turned out surprisingly well. Both my husband and his buddy went through the sides almost like they weren’t there. They really seemed to enjoy the meal.

As the week’s plan moves along, there are several – actually four – 30 Minute Meals and one Slow Cooker Meal to help make dinners a little easier.

My personal favorite this week is the Roast Pork Loin Wrap on Day 2. I’m testing some different versions of flatbread lately, and I’ve really been enjoying the wraps…

Gluten-Free Diet Menu Plan for the Week of October 7, 2012

I’m running behind this week but I finally finished this week’s gluten-free diet menu plan. Since I usually cook my menu plans for my family, I can tell you what actually happened with the dishes that I’ve already prepared. Since it’s now Wednesday, here’s how Sunday and Monday turned out.

Tuesday, I departed from the plan because of circumstances. But, having a basic plan made it easy to decide what to do in spite of how things went during the day.

Gluten-Free Diet Menu Plan for the Week of September 16, 2012

This week I’m adding a new description in the Gluten-Free Diet Menu Plan so you can easily see which meals are the quickest to use for a busy night. Those quick meals can be done in half an hour or less, so I call them 30 Minute Meals. I have three of them marked in this menu plan.

Gluten-Free Diet Menu Plan for the Week of September 2, 2012

In the plan for this week of gluten-free recipes are some easy meals along with some family “old favorites” — hamburger steaks, chicken breasts in the crock pot, broiled ocean perch, chicken with cannellini beans, shepherds pie, crab cakes and pepperoni bread. I will definitely be disappointed if I don’t manage to complete every day of this plan.  Something always seems to interfere somewhere or other, but we do eat better – healthier, and more economical – when I begin with a plan. Do you have a hard time staying with a menu plan?  My easiest days sometimes seem to be when we have a slow cooker meal.  I love coming into the house tired and hungry at dinner time, [...]

Easy Gluten-Free Snacks – Oatmeal Bars with Molasses

Any time of year is my favorite time for gluten-free snacks, but in the summer I like to make things that take less time in the kitchen. These little bars of oatmeal and molasses are so easy to stir together that I don’t even need the mixer. I stir them together, pop the pan in the oven, set the timer and come back later.

These bars are sweet, so you might like them with less sugar than what I’ve called for. When I follow this recipe, my husband will eat them, too. That’s great because then I don’t need to make a separate pan of treats for him.

Zucchini Bread and a Few Little Sandwiches for a Gluten-Free Snack

I baked this gluten-free zucchini bread with some of the squash that is so plentiful in local gardens right now. The moist and flavorful quick bread has a good texture and just enough sweetness to make a great gluten-free snack. It tasted good alone. It also tasted good with apple butter, and also with cream cheese…also with strawberry jam, elderberry jelly, peanut butter and regular butter. The sandwiches were easy to make and kid-friendly!

Gluten-Free Crab Cakes for the Whole Family

These delightful rounds of gluten-free crab meat were not a dish I learned about when I was very young, but as soon as I tasted them, I wanted to make up for lost time. Whether I use almond flour or breadcrumbs to make them, these crab cakes seem more impressive than the effort they take to prepare. The whole family will like them whether they need to eat gluten-free or not.
