Gluten-Free Roasted Chicken

Gluten-free roasted chicken with spice rub is a great way to perk up your dinner.

The aroma…the texture…and the taste are different, even if the same seasonings are used, as your favorite chicken breast recipes. Of course, chicken pieces are often easy to make and usually quick to cook, which makes them popular for a weeknight meal in a busy schedule.

I know because I often have gluten-free chicken on my menu. Everyone in the family enjoys eating it.

However, a whole chicken roasting in the oven is an entirely different dish than just chicken breasts or thighs. As I said, the aroma is different. The texture is different. And the taste is different, so…

…try a whole roasted chicken, unstuffed, with a spice rub for dinner. It takes a little longer to cook than chicken pieces, but once it is in the oven, it is easy from there on. A whole chicken can also be stuffed, but that adds to the cooking time, so I’m going with the simpler, shorter option with this recipe.

Gluten-Free Menu Plan for the Week of November 2, 2014

For the Gluten-Free Menu Plan this week the attention is on comfort food –all gluten-free and also family-pleasing. Since I cook for a mixed group – I’m gluten-free, the others are not – it’s important that the recipes are not just gluten-free but also family-pleasing.

Many of these dishes have other options, too, such as dairy-free or low carb.

They all qualify in my family as comfort food.

Gluten-Free Menu Plan for the Week of October 26, 2014

This gluten-free menu plan includes a whole week’s worth of dinners that will satisfy you and your family. It includes low carb dishes for me, plus “regular” side dishes for others in the family—but it’s all gluten-free.

There is even an apple tart for dessert, which is not in the least bit low carb (so I will be passing that up), but it is entirely gluten-free, and my family will enjoy every bite of it! They need to have a dessert now and then, even if I don’t eat it.

Except for the first day with its sweet dessert, I won’t have time to cook two different meals, so I’ve kept the double-focus of low carb and “regular” to be as simple as possible – so it isn’t really like cooking two different meals. It’s more like fixing one simple extra dish – like baked potatoes or steamed rice.

Sweet Potato Chili

Do you ever wonder what you can do with sweet potatoes?

Can you imagine sweet potato chili?

A lot of people, some of them in my own family, would rather go hungry than eat sweet potatoes.

But, due to a medical problem I was recently diagnosed with, they are getting only what I can cook and eat for myself… poor babies.

So, it’s out with the old standbys like white potatoes, rice, and GF pasta. And, in with the new like…

Gluten-Free Menu Plan for the Week of October 12, 2014

Well, another week is already here, and this gluten-free menu plan will help get you through it with a lot less stress and healthier eating, too!

It’s a whole week full of low carb dishes that I think you’ll enjoy from start to finish. Since I am stricter about eating low carb meals than my husband Al is, I do fix him starchy sides when he wants.

I know from first-hand experience that these meals are good just as they are. But, it is easy to add a side of rice, potatoes or pasta if someone in your family would enjoy it, without a lot of extra fuss… Just like I do for my husband, Al.
