Here we are ready for Presidents Day this week, and even though the groundhog predicted an early spring a few weeks ago, we’re still having winter here. The whole idea of winter makes me want another steaming mug of coffee, so come join me while we look at the gluten-free menu plan for this week.
There are three 30 Minute Meals this week, including the one for Presidents Day. So, in honor of George Washington’s birthday, we’re adding dried cherries to the Marshmallow Crispy Treats.
For the first time this week we are featuring a Paleo Diet Menu (that’s on Day 7).

It’s not every week that I start off with hors d’oeuvres. But I did this week. Al and I just love the taste of the hummus and this particular brand of crackers. We are getting nothing for the mention but we really do like them.
And, it’s a great warm up for the Easy Meat Balls, Red Skin ‘Taters, Salad and Almond Bar dessert that complete the eatin’s fer the day!
The week continues with Braised Pork, Roasted Beets and Sweet Potatoe Wedges… Al (he sure is getting mentioned a lot this week) thought that they were gross when I roasted the beets myself in the oven. But, their sweet meaty taste and texture were worth it.

I’m so glad you’ve stopped by to see today’s gluten-free menu plan. I’ve started off the week with an easy oven meal – a gluten-free recipe for Chicken Mushroom Rice Bake in the oven alongside some Oatmeal Raisin Walnut Bars. And there’s more good stuff on the following days, so just read along and find out what else I’ve got planned….
This week’s gluten-free diet menu plan has favorites for everybody.
It begins with a warming pot of Multibean Soup, served alongside fish sticks and salad. Then, the next day I’ve included a bit of Tex-Mex flair with some Avocado, Tomato and Cheese-Topped Chicken. My husband Al really likes this one.
For Day 3 I put together a slow cooker meal of Beef Pot Roast. It’s gluten-free and can also be low-carb or paleo if you want it to be that way. Be sure to save some of the sliced beef for Roast Beef Sandwiches for tomorrow’s dinner (“Wednesday Night Blue Plate Special” at the Home Diner ).

Welcome to another Elegantly Gluten-Free Menu Plan designed specifically to help you fill out your own gluten-free diet with wholesome, nourishing meals. Here where I live we are in the midst of winter with snow on the ground and more on the way. It’s great for building a fire in the fireplace every chance we get and stopping at the slightest excuse to have another cup of tea.
And, with weather like this, knowing that you have great meals to prepare is a real plus. I know it makes my life easier. Especially, when Al says “Honey, what’s for dinner?”

Sometimes it seems really hard because you have to make or buy some sort of gluten-free bread and assemble all of the ingredients for your sandwich. When you look at it, it can sometimes look like an overwhelming task.

Gluten-free and Gluten-y family members alike will all absolutely love this beef round steak with vegetables from the crock pot recipe.
It's a classic stick-to-the-ribs family-style meal that is every bit as good as your favorite stew... And, you can thicken the delicious broth that you'll get after simmering for several hours in your slow cooker into a silky-smooth gravy that will make the meal even better.
This meal only takes 20-minutes or so to put together and then can simmer for as long as necessary... Whatever that means in your world. It's a low preparation-time recipe that you and your whole family are sure to enjoy.
This week's Gluten-Free Diet Menu Plan is high-lighted by a quick-and-easy 30 minute meal featuring Roasted Chicken Breasts garnished with veggies. I've used some of my favorite cut vegetables in Day 5's treat. However, you can modify the recipe to use yours!
But, no matter what you top it with... Steaming hot from the oven, it's sure to look good and taste delicious too!
... I usually use my own preference for the proportion of pasta to vegetables in this dish. Try it and decide what works best for you. I often cook more veggies than the recipe calls for. And, I'll keep them in a separate dish so that I can add more of them to my plate if the mood strikes me. Depending on how many carbs I've already had that day, I may skip the pasta entirely and just have my sauce with the veggies... I really like just the veggies in sauce sometimes. This is one of my family's favorite gluten-free ground beef recipes. The gluten-free sauce combined with the ground beef seasoned perfectly to your taste can be a marvelous addition to your meal time.
… As I looked around the Internet recently I noticed articles and comments about individuals becoming ill because they used condiments which were not gluten-free. I understand from first-hand experience how very easy it is to accidentally contaminate your food with condiments such as Worcestershire sauce, bouillon cubes and things like this. I’ve done it myself... I don't know how many times.
This week's Gluten-Free Diet Menu Plan is highlighted by the fact that it's got 2 Slow Cooker Meals and 5 quick, 30 Minute Meals. The meals are all quick or "no-brainer" easy! I guess it reflects the fact that I've been out of the office for several weeks on a temporary assignment. So I'm "knockin' 'em out" fast and furious today.
