Zucchini Bread and a Few Little Sandwiches for a Gluten-Free Snack

I baked this gluten-free zucchini bread with some of the squash that is so plentiful in local gardens right now. The moist and flavorful quick bread has a good texture and just enough sweetness to make a great gluten-free snack. It tasted good alone. It also tasted good with apple butter, and also with cream cheese…also with strawberry jam, elderberry jelly, peanut butter and regular butter. The sandwiches were easy to make and kid-friendly!

Gluten-Free Marshmallow Crispy Treats Dressed Up a Little

Although this may not seem such an exciting recipe for many cooks, for me this is an exceptional treat.

Even if the new Kellogg’s® Rice Krispies® Gluten Free cereal weren’t whole grain rice…I’d still make this gluten-free snack at least once just to celebrate the first time in about 12 years that I could make an old favorite. You see, I haven’t had Rice Krispies® in a long time, but now they are available in a gluten-free version. So, after enjoying a couple of breakfasts out of that cereal box, I set out to make some of those quick and easy, crowd-pleasing treats from long ago. They really are easy!

Redskins ‘Skins with Olive Oil and Garlic Salt – Gluten-Free Snacking

Snacks are always popular around my house, sometimes more so than meals! Gluten-free snacks that my husband likes can be especially hard to find, so when we have one that we both like, like these redskins, I take note. Don’t tell him :-) but these are also much healthier than many of his favorite snacks. I recently served them with some carrot and celery sticks on the side – he was well on his way to a whole day’s worth of veggies before he even got to dinner!
