Leftovers may seem boring, but…what if you don’t know they’re leftovers? For this week’s Gluten-Free Menu Plan I’ve paired dinners made from the same meat dish without it being obvious that the second one is “left over.”
Sometimes the same dish two days running makes people happy. Chili, for example, gets rave reviews at my table even on the second night. On the other hand, lasagna might make one of my sons happy, but not my husband, Al.
Serving the same dish the next day can be okay with everyone, but if not, below are some follow-ups that are not so obvious.
This week’s gluten-free menu plan has a couple of quick and easy days, a scrumptious braised Tex Mex meal, a casserole, a crock pot dinner that makes enough for sandwiches the next day, and a pot roast dinner.
With a menu plan like this it’s easier to do my shopping, and I need that help even more since gluten-free shopping can take longer with all those labels to read. The manufacturers sometimes change things without any notice, and I hate finding out after I’ve eaten something that it was not gluten-free anymore!

However, I’m changing my focus for the Elegantly, Gluten-Free blog a bit a bit.
In addition to traditional gluten-free family-friendly recipes, I’ll be including more recipes that are also low carb and refined sugar-free.
That’s what I’ll be eating, although the rest of my family doesn’t always follow such guidelines. At times I’ll share dishes they love that may be gluten-free but not necessarily low in carbs or refined sugars.
I hope you’ll enjoy the change. Not only will it improve the variety of the recipes I’ll be sharing with you, it will also be healthier.

This week the Gluten-Free Diet Menu Plan begins with a dinner fit for a celebration, at least in our house… we all like it that much.
Tender, juicy salmon fillets with spinach on the side is one of my family’s favorite dinners. And, to make it even better, it includes a Flourless Chocolate Cake for dessert, which is always good for a party. The cake takes advanced preparation and then it needs time to cool. But, the rest of the dinner takes only 30 minutes to cook.
This week the Gluten-Free Diet Menu Plan focuses on low carb dishes. These meals are simple to make … And, even without a lot of starchy side dishes, it’s filling and probably a lot healthier.
Personally, I feel better when I eat low carb meals like these. I’ve always been a fan of the Atkins and similar diets.
And, these are dishes that the rest of my family likes, too…
I’ve discovered an absolutely delicious sandwich bread recipe. It’s called “Sandwich Bread with Sourdough Starter.” I’m using it in the sandwich supper I’ve included in the Gluten-Free Diet Menu Plan this week. You can find the link in the menu plan.
Several weeks ago I started my own batch of sourdough starter by following Amy Green’s directions and I found it has worked just as her instructions say… It really is simple to make!
This week’s Gluten-Free Diet Menu Plan features “yummy” favorites for the entire Mothers Day extravaganza beginning with brunch and ending with a lovely dinner that includes a “chocaholic” fudge and vanilla ice cream brownie dessert.
The rest of the week is filled up with six more healthy, family-pleasing meals with flavors ranging from cheeseburger to paprikash and from mustard dill sauce to garlic cheese bread.
