Gluten-Free Diet Menu Plan for the Week of October 21, 2012

Beef Tacos with Salad and Refried Beans finished off by a desert of Applesauce Cake with Cherries and Walnuts kick-off this week’s culinary extravaganza. And, rushing forward … right on that Applesause Cakes’s heels, is one of the easiest meals of the week… A nutritious dinner of Cod Fillets Sauteed with Garlic, Onion and Peppers all rolled up in a wrap.

Altogether there are three 30 Minute Meals on this weeks menu to help make dinners a little easier on busy nights.

One of my favorites this week is the gluten-free recipe for a slow cooker Blackeyed Pea Soup. I hope you enjoy it as much as my family does!

Add Kale, Onion and Peppers to Your Quick Healthy Meals List

I always like to have a few quick healthy meals handy like this gluten-free recipe made from kale, onion and peppers.

My husband actually likes this combination with kale, even though he never gets excited when he hears it’s on the menu. (Don’t tell him that I know he likes it J)

Having several 30 minute meals ready to go when necessary can be a lifesaver.

For more protein to go with these veggies, you can cook an egg or two in the center of the pan during the last few minutes of cooking time. These eggs are not technically poached since they aren’t in water deep enough to cover them, but they will cook nicely if you

Gluten-Free Diet Menu Plan for the Week of October 14, 2012

This week’s gluten-free diet menu plan begins with a hearty Tomato Bean Soup to accompany some Broiled Tilapia Fillets. We had a guest with us for this meal today so I cooked more sides than usual and it turned out surprisingly well. Both my husband and his buddy went through the sides almost like they weren’t there. They really seemed to enjoy the meal.

As the week’s plan moves along, there are several – actually four – 30 Minute Meals and one Slow Cooker Meal to help make dinners a little easier.

My personal favorite this week is the Roast Pork Loin Wrap on Day 2. I’m testing some different versions of flatbread lately, and I’ve really been enjoying the wraps…

Gluten-Free Diet Menu Plan for the Week of October 7, 2012

I’m running behind this week but I finally finished this week’s gluten-free diet menu plan. Since I usually cook my menu plans for my family, I can tell you what actually happened with the dishes that I’ve already prepared. Since it’s now Wednesday, here’s how Sunday and Monday turned out.

Tuesday, I departed from the plan because of circumstances. But, having a basic plan made it easy to decide what to do in spite of how things went during the day.

A Delicious and Easy Lentil Soup Recipe

I don’t know where you live, but in northeastern Ohio where I and most of my family live, the days are getting shorter and cooler, and the nights are sometimes downright chilly. For me, this signals perfect weather for some of my favorite, easy-to-prepare healthy food recipes.

One of my all-time favorites is a healthy, totally vegetarian lentil soup that uses carrots, celery, onion and vegetable stock. But, if you would prefer a non-vegetarian treat, just use beef or chicken stock. Either way it tastes so good on a chilly fall day. Both I and my family absolutely love it.

This week I’m adding a new description in the Gluten-Free Diet Menu Plan so you can easily see which meals are the quickest to use for a busy night. Those quick meals can be done in half an hour or less, so I call them 30 Minute Meals. I have three of them marked in this menu plan.

Creamed Tuna is Easy for a Gluten-Free Diet

A perennial dinner favorite in my house is Creamed Tuna. It’s good when I’m short on time and I need to go shopping, but we’re hungry right now…so my gluten-free diet also has to satisfy everyone in the family.

The foundation of this easy dinner is a medium white sauce. I learned a long time ago that a basic white sauce or cream sauce is a kitchen standby, and it’s just as useful for a gluten-free diet as it is for gluten-y cooking. It works for a lot of my favorite 30 minute meals!
