Apple Galette, Gluten-Free and Easier than Pie!

Apples and spice go together so well! Just about all they need is a little something to wrap around them while they bake…like some pastry crust. I’ve made a lot of gluten-free apple pies, but none of them were any better than this galette.

Easy Gluten-Free Beef Cube Steaks in the Crockpot

I really appreciate a gluten-free meal that is quick and easy to prepare. Even when I’m at home, some days I like to have dinner started and simmering away on its own while I work elsewhere. In a crockpot or slow cooker, these Beef Cube Steaks cook on their own without any attention until it’s almost time to eat. Then we have a frugal meal that my husband thinks is awesome, and there’s not too much to clean up.

Potato Salad with Agave and Bacon Dressing — Gluten-Free

Onions Braised With Parsley

Onions add their sweet, savory flavor to many of the things I cook. They also deserve a spotlight of their own. You can usually find pearl onions year-round in the produce department (or if you want, in the freezer case). Dressed up just a little with butter and parsley, and maybe a little paprika, they’re a great side dish for many meals. You can easily use a substitute for the butter to make the onions casein-free.

Butterscotch Bars – Gluten-Free

“Yum!” I heard as I was setting up a photo of the Butterscotch Bars I’d just baked. I turned around to see my husband grabbing a whole handful of them from the pan as he was finishing his first mouthful. He’s usually not so interested in my gluten-free cookies, but these really were outstanding.
