This week will be busier than ever for me.
Because of that I planned the Gluten-Free Diet Menu Plan to have one day of comfort food – Chicken and Dumplings with Peas and Carrots!
And, the rest of the week will be full of slow cooker meals, 30 minute meals and one easy casserole.
I started the Gluten-Free Diet Menu Plan this week in the easiest way possible. I took a family request!
Sometimes when I just don’t know where to begin, I need to remember that I don’t always have to come up with the answers – I can ask the rest of the family what they want.
This time the request was for Cabbage Rolls and Blueberry Pie. How could I go wrong with that?
This week’s Gluten-Free Diet Menu Plan starts off with a South of the Border chicken entrée that is good enough for guests, with a dessert of flan and a snack to start the week off of Oatmeal Raisin Walnut Bars.
For the next day, which will be St. Patrick’s Day, there is a traditional corned beef dinner which, even though I’m not Irish, I cook at every opportunity.
I’ll try to save enough of it to make the Corned Beef Hash Skillet a couple of days later.
The Gluten Free Menu Plan this week includes a variety of gluten free meals which run the gamut from Beef Pot Roast to Chicken Stir-Fry to Fish Fillets. It even has a TexMex Crockpot meal of Green Chili Pulled Pork on Day 5.
Plus, to make this week’s menu plan even better, I have listed 2 tasty, but healthful, treats for any family members who might just have a sweet tooth. So, you’ll find some Walnut Muffins and Oatmeal Spice Cookies in the menu plan, too. (Just in case we all need something to snack on. )
My husband, Al, and I are enjoying the sun shining in our windows this afternoon while we’re holding hot mugs of tea and trying to ignore what the thermometer on the deck says.
Since it’s been in the low teens, I’m inspired to find more gluten-free recipes for the oven for this week’s gluten-free menu plan. Not all of this week’s dishes are oven-baked — some are in the slow cooker and some are 30 minute meals on the stove top — but plenty are..

Well, we survived another 4th of July weekend. We had a birthday party, fireworks and the usual visitors to the area that we live in. It’s hot and likely to stay so for another few days, so I’ve come up with a menu plan that is oriented towards one thing (besides being delicious and fun)…it’s easy.
There are three 30 minute meals, a slow cooker and an assortment of several fairly easy traditional dishes. I don’t like cooking when it’s so hot out and I expect that many of you feel the same way I do.
Two meals of note: Day 1 has a Paleo meal of Braised Pork Loin Chops in a somewhat traditional format. Day 4 also features a healthy Paleo 30 minute meal. I hope your family enjoys this week’s menu plan as much we do.
Summer is living up to expectations by being hot and humid…humid on steroids here in N.E. Ohio!
