Gluten-Free Diet Menu Plan for the Week of April 14, 2013

This week’s Gluten-Free Diet Menu Plan is highlighted by the fact that it’s got 2 Slow Cooker Meals and 5 quick, 30 Minute Meals. The meals are all quick or “no-brainer” easy!

I guess it reflects the fact that I’ve been out of the office for several weeks on a temporary assignment. So I’m “knockin’ ‘em out” fast and furious today.

Gluten-Free Diet Menu Plan for the Week of March 17, 2013 – St. Patrick’s Day

Are you wondering how to stay on a gluten-free diet and still enjoy a traditional St. Patrick’s Day feast? Here are some menu ideas that will see you through the day and take your menu plan all the way to the end of the week.

Two of these main dishes are made in the crockpot – the corned beef and the beef round roast — to make great meals without hours of watching something cook.

There are three 30 Minute Meals this week – corned beef sandwiches, broiled salmon and pizza topped with shrimp. The chicken stir fry is quick, too, but the sweet black Thai rice that is paired with it takes a little longer to cook so I usually allow almost an hour total time for that dish.

Gluten-Free Chicken Breast Sandwich with Tomato & Mayonnaise

In my family’s opinion, this is one of the best sandwiches there is… Period!

It’s a great meal for a gluten-free diet. It’s also not too hard to make several for a mixed group of gluten-free and gluten-y people since each person can have their own choice of bread on their own plate. You can put one of these sandwiches together in 10 minutes or less for a quick and easy meal.

Gluten-Free Diet Menu Plan for the Week of March 3, 2013

The Menu Plan for this first week in March starts off with a quick and flavorful pork chop dinner and finishes with a roast beef dinner (it’s also a delicious paleo meal). In between are chicken soup, a casserole, pan-grilled salmon and more. Four of these are 30 minute meals so there’s still time to eat on busy days.

Gluten-Free Diet Menu Plan for the Week of February 24, 2013

I’ve got 7 great days of wonderful dishes lined up for this week’s gluten-free diet menu plan. Here are the highlights.

Stuffed Peppers, a classic in my home, will begin the week. I’ve combined the peppers with raw veggies and biscotti. Now biscotti is really fun to make. I hope you enjoy fooling around in the kitchen like I do.

Then, on Day 2 there will be a Mediterranean-inspired chicken. That’s followed by a Low Carb Meal on Day 3 which features tilapia done in the oven; quick and yummy.

Day 4 is another old favorite in my home… a Crockpot Meal of Beef Stew. My husband absolutely loves this one so I’ll probably need to make extra.

Gluten-Free Diet Menu Plan for the Week of February 17, 2013

Here we are ready for Presidents Day this week, and even though the groundhog predicted an early spring a few weeks ago, we’re still having winter here. The whole idea of winter makes me want another steaming mug of coffee, so come join me while we look at the gluten-free menu plan for this week.

There are three 30 Minute Meals this week, including the one for Presidents Day. So, in honor of George Washington’s birthday, we’re adding dried cherries to the Marshmallow Crispy Treats.

For the first time this week we are featuring a Paleo Diet Menu (that’s on Day 7).

Valentines Day week can seem a little crazy with special treats, Candy Kisses and Red-Ribboned Boxes of really tempting Holiday Chocolates. But your gluten-free diet must stay intact in spite of those marvelous goodies.

Gluten-Free Diet Menu Plan for the Week of February 3, 2013

It’s not every week that I start off with hors d’oeuvres. But I did this week. Al and I just love the taste of the hummus and this particular brand of crackers. We are getting nothing for the mention but we really do like them.

And, it’s a great warm up for the Easy Meat Balls, Red Skin ‘Taters, Salad and Almond Bar dessert that complete the eatin’s fer the day!

The week continues with Braised Pork, Roasted Beets and Sweet Potatoe Wedges… Al (he sure is getting mentioned a lot this week) thought that they were gross when I roasted the beets myself in the oven. But, their sweet meaty taste and texture were worth it.

The Chicken Pot Pie is a traditional recipe but it’s buddy…
