Gluten-Free Navy Bean Soup

Are dried beans gluten-free? Until recently, I’d have instantly said “Yes!”… keep reading to find out why I was wrong.

Navy beans are one of our favorites around here… and, it’s one of my husband Al’s all-time favorites. He likes them with just about anything…in a salad, as part of a main dish or as a side with dinner. He likes them in many combinations, but most of all, he loves them in soup.

Navy Bean Soup is an easy, gluten-free recipe to make, especially in my slow cooker.

Gluten-Free Marshmallow Crispy Treats For The Holidays… Now Casein-Free, Too!

One of the best-loved holiday treats in the U.S. is made with marshmallows and crispy rice cereal. Not in the U.S.? And they’re one of your favorites too? If so, please leave a comment below and let me know what you like most about them…

In this version I dressed them up a little for Christmas, so they’re gluten-free and also can be casein-free.

Even if the new Kellogg’s® Rice Krispies® Gluten Free cereal weren’t whole grain rice…I’d still have made this gluten-free snack just to celebrate the first time in over 12 years that I could make an old favorite. You see, I haven’t had Rice Krispies® in a long time, but now they are available in a gluten-free version.

Gluten-Free Mini-Meat Loaf with Mushroom Sauce

Here’s an old favorite that’s already easy to make, made a little faster. The smaller individual-size loaves cook faster.

Because they’re smaller, they’re also quick to freeze. They thaw quickly for a meal later, so I often double the recipe and make extra.

When I was converting this recipe to be gluten-free, I discovered several different possibilities…

Gluten-Free Diet Menu Plan for the Week of August 18, 2013

There are many different approaches to eating… Low-carb, paleo, Atkins, whole foods, real foods, raw and many, many more. And of course a Gluten-Free Diet.

One of the nice things about a many of these different approaches to eating is that they are often interchangeable with each other. I personally like to intermix Paleo and Low-Carb with my “foundational” Guten-Free approach to eating.

For instance, in this week’s Gluten-Free Diet Menu I have three paleo and several low-carb dinners planned…

Gluten-Free Potatoes with Olive Oil & Parsley in the Slow Cooker

The simplest ideas are sometimes the most useful. This is a simple recipe and it is that simplicity that makes it so good. I did these potatoes in my slow cooker so I made them “on autopilot” while I did other things.
 
I made the potatoes shown in the picture in the slow cooker as cubed potatoes with olive oil & parsley for seasoning.
 
Quartered or cubed potatoes with your favorite seasonings would work just as well. I served these recently for dinner with what I call a mini-meat loaf.
