Gluten-Free Diet Menu Plan for the Week of September 16, 2012

This week I’m adding a new description in the Gluten-Free Diet Menu Plan so you can easily see which meals are the quickest to use for a busy night. Those quick meals can be done in half an hour or less, so I call them 30 Minute Meals. I have three of them marked in this menu plan.

Creamed Tuna is Easy for a Gluten-Free Diet

A perennial dinner favorite in my house is Creamed Tuna. It’s good when I’m short on time and I need to go shopping, but we’re hungry right now…so my gluten-free diet also has to satisfy everyone in the family.

The foundation of this easy dinner is a medium white sauce. I learned a long time ago that a basic white sauce or cream sauce is a kitchen standby, and it’s just as useful for a gluten-free diet as it is for gluten-y cooking. It works for a lot of my favorite 30 minute meals!

Chicken and Penne with Kale and Tomatoes for an Easy Chicken Dinner

Chicken strips, red tomatoes, green kale and cream-colored pasta – I like how an easy chicken dinner can have such eye appeal. Some people who won’t normally eat many veggies will happily chow down on these mixed with pasta.

This gluten-free chicken penne is quick to prepare – 30 minutes or less. I used Tinkyada penne when I made this chicken pasta recipe but any pasta you like will work.

Gluten-Free Diet Menu Plan for the Week of September 2, 2012

In the plan for this week of gluten-free recipes are some easy meals along with some family “old favorites” — hamburger steaks, chicken breasts in the crock pot, broiled ocean perch, chicken with cannellini beans, shepherds pie, crab cakes and pepperoni bread. I will definitely be disappointed if I don’t manage to complete every day of this plan.  Something always seems to interfere somewhere or other, but we do eat better – healthier, and more economical – when I begin with a plan. Do you have a hard time staying with a menu plan?  My easiest days sometimes seem to be when we have a slow cooker meal.  I love coming into the house tired and hungry at dinner time, [...]

Gluten Free Diet Menu Plan for the Week of August 26, 2012

Here is my next gluten-free diet menu plan, complete with some of my family’s favorite meals.

I haven’t prepared a menu plan lately, and I’ve been feeling the lack of organization. To be honest, it’s been crazy! Having a plan should return a tad more peace into my kitchen – it always does.

Another benefit: Most of these gluten-free meals also are fairly simple to prepare. The baked snacks and desserts take a little more time, but if you don’t want to turn on the oven for them, you can always serve more of the fruit and yogurt snacks…or buy a few goodies from your local gluten-free bakery or health food store. The Oatmeal Bars and the Applesauce Nut Muffins are favorites for packing and snacking around here. The Chocolate Potato Cake is planned for a birthday request.

Gluten-Free Crab Cakes for the Whole Family

These delightful rounds of gluten-free crab meat were not a dish I learned about when I was very young, but as soon as I tasted them, I wanted to make up for lost time. Whether I use almond flour or breadcrumbs to make them, these crab cakes seem more impressive than the effort they take to prepare. The whole family will like them whether they need to eat gluten-free or not.

Chicken Mushroom Rice Bake with Homemade Gluten-free Mushroom Sauce

This old family favorite is made from scratch, even the sauce, so you know that it’s safe for a gluten-free diet. Since the chicken is boneless and skinless, it’s easier to serve and clean up than the bone-in version.

You can use your favorite vegetables in it, but our favorites are either green beans, or peas and carrots, or chopped broccoli. You’ll have a complete meal in one dish with this gluten-free casserole. If you want to make it dairy-free, you can use the oil instead of butter or margarine, and also use a dairy-free milk, or mushroom or vegetable stock instead.
