An Easy and Inexpensive Gluten-Free Salad – Tomato and Feta

This tomato and feta salad is a very easy to make and totally inexpensive, healthy gluten-free salad recipe.

I positively love the explosion of flavor and delicious wetness that courses through my mouth as I bite into each of the succulent grape tomatoes in this recipe… If possible use only naturally ripened tomatoes when you put your salad together. Not only will it be healthier… It will taste so delicious!

Feta cheese is always popular at my house and it is even more so when it’s in this strikingly colorful blend of flavors with ripe and sweet grape tomatoes, crumbled feta cheese and olive oil with ripe olive accents like in this salad. I think that it’s one of the most beautiful, delicious gluten-free salad recipes that I make. It is worthy of guests, and is surprisingly inexpensive to prepare… especially after your spring garden begins to produce.

Did I really say those 3 words together — delicious, gluten-free and inexpensive? Yes, I did.

Aside from the obvious challenges of cooking and eating gluten-free (like learning how to find out what the ingredients are in every single item that comes across my lips), another major issue many people have with gluten-free food is its high cost! This beautiful salad is an example of how delicious and appetizing a gluten free dish can be without the exorbitant cost!

Sometimes I serve this salad as is, but other times I add some of the optional cucumber, romaine, kale, spinach, asparagus or avocado. It’s a versatile recipe!

Whether or not you like the optional ingredients, I hope you’ll enjoy some of this salad soon. Besides being gluten-free and frugal, it’s full of healthy vegetables and oils, even though it is low in refined sugars.

Gluten-Free Tomato and Feta Salad Ingredients

Gluten-Free Tomato and Feta Salad Ingredients – Except for the Onion I Haven’t Gotten Out Yet

Tomato and Feta Salad

Ingredients:
1 pint Grape Tomatoes
1 small Sweet Onion, sliced very thin, about 1/2 cup
1 clove Garlic, minced
2 tablespoons Extra Virgin Olive Oil
1 tablespoon Balsamic Vinegar
Salt and Pepper to taste
1 teaspoon Fresh Basil, chopped, or half as much Dried Basil
1/4 cup pitted Olives
1/2 cup Feta Cheese, crumbled
Optional: Cucumber or Avocado chunks, torn Romaine, Kale or Spinach, or crisp Asparagus spears

Directions:
Mix ingredients together in a bowl.
Chill for 10-20 minutes while flavors mingle.
